Marinated tomatoes with bruschetta

An easy, crowd-favorite snack that is quick to prepare in a moment! You can also pair the marinated tomatoes with whipped feta and/or pesto to elevate the dish.

Ingredients
  • 250 g red cherry tomatoes

  • 250 g yellow cherry tomatoes

  • 2 cloves of garlic

  • A few fresh basil leaves

  • 0.5 dl olive oil

  • 2 tbsp thick balsamic vinegar

  • Salt to taste

  • Pepper to taste

  • 1 baguette

Preparation
  1. Cut the tomatoes into quarters. Thinly slice the garlic and basil leaves.

  2. In a bowl, combine the tomatoes, garlic, basil, olive oil, and balsamic vinegar. Mix well.

  3. Season with salt and pepper. Serve immediately, or let it marinate in the refrigerator for up to 8 hours.

  4. Slice the baguette into 1 cm thick slices and arrange them on a serving plate.

  5. Just before serving, spoon the tomato mixture onto the baguette slices and garnish with fresh basil leaves.
