Marinated tomatoes with bruschetta
An easy, crowd-favorite snack that is quick to prepare in a moment! You can also pair the marinated tomatoes with whipped feta and/or pesto to elevate the dish.

Ingredients
250 g red cherry tomatoes
250 g yellow cherry tomatoes
2 cloves of garlic
A few fresh basil leaves
0.5 dl olive oil
2 tbsp thick balsamic vinegar
Salt to taste
Pepper to taste
1 baguette
Preparation
Cut the tomatoes into quarters. Thinly slice the garlic and basil leaves.
In a bowl, combine the tomatoes, garlic, basil, olive oil, and balsamic vinegar. Mix well.
Season with salt and pepper. Serve immediately, or let it marinate in the refrigerator for up to 8 hours.
Slice the baguette into 1 cm thick slices and arrange them on a serving plate.
Just before serving, spoon the tomato mixture onto the baguette slices and garnish with fresh basil leaves.
